The low-carb cults have maligned the potato as a poor choice for nutrition but consider the facts:

Potatoes have more potassium than bananas
Potatoes are gluten free
Potatoes have 15% of the recommended daily fiber content
Potatoes have 27% of the recommended vitamin B6
Potatoes have 28% of the recommended amount of vitamin C
Potatoes have a higher concentration of protein than Whey and a higher biologic value than soy beans
Boiled potatoes provide the highest satiety score of most foods

While it has a high glycemic index, the immediate spike in blood glucose after eating has NEVER been shown to be deleterious in the long run.

A person can live on a diet of potatoes for years – one in three Irish did prior to the potato famine

If you want a healthy diet you will give up fries, but you will include some baked or boiled potatoes – but use simple seasonings to reduce caloric intake.
