Making Home Made Chocolate is so easy, this 4 minute video is a basic recipe, using only 3 ingredients and shows you how, it can be that simple.  (I usually add a small amount of coconut oil and vanilla too)!  I hope  it inspires you to make your own delicious creations at home.  For more nutrient powered goodness check out the recipe and other ideas below.

Home Made Chocolate & Video Demonstration
Ingredients:

  • 1 cup or 95g cacao butter, shaved or grated
  • 1 Tbsp or 10g coconut oil (optional)
  • seeds of 1/2 vanilla pod or 1/2 tsp of vanilla extract
  • 2 – 3 Tbsp or approximately 45g coconut syrup, raw, unfiltered honey or maple syrup (taste to check for your desired sweetness)
  • pinch of sea salt
  • 3/4 cup or 60g cacao powder  or use about 40g if you prefer a milkier chocolate flavour
  • 1 heaped tsp of Maca powder (optional)
  • 2-3 Tbsp coconut cream for a milkier flavour (optional)

Directions:

  • Melt the cacao butter and coconut oil (if using) with the sweetener of choice (maple or coconut syrup), salt and vanilla over a double-boiler
  • When this is well and truly melted, add the desiccated coconut, sift in the cacao and maca (if using) a little at a time, stirring well and constantly scraping the remnants from around the edge of the bowl.
  • It’s ready when the mixture is smooth and runny
  • Taste the mix and add in extra coconut cream or sweetener if need be
  • Use a dessert spoon to fill the tiny chocolate moulds or patty pans
  • then place the tray of chocolates in the fridge for about 30 minutes to set


Notes

  • extra yumminess:  place a thin layer of crunchy or chewy bits in the bottom of each cup to add texture eg goji berries, crushed almonds or macadamias, bee pollen or cacao nibs – anything that you love with your chocolate.
  • cacao butter: can be found at most natural health food stores
  •  If you have get stuck without molds or patty pans,  line a tray with baking paper & pour the mix onto it until you have a thin layer.  When the mix is set cut the chocolate into small triangle shapes.
  • If you like chocolate that’s less bitter or dark add less cacao powder
  • Adding coconut oil softens the chocolate texture

Thermomix recipe:

  • Place the cacao butter in the bowl and grate eg speed 8 for 5 seconds
  • Add the coconut oil, sweetener of choice (maple or coconut syrup), salt and vanilla to the bowl
  • Set the timer to 5 mins, at 37 degrees on speed 2, (you may need to scrape the sides of the TM during this time).  If the butter hasn’t melted in the 5 mins, melt for another minute.
  • When everything is melted and combined, scrape down the sides of the TM and set the timer to 10 mins, at 37 degrees on speed 3,  add the cacao powder,  desiccated coconut and maca (if using) 1 tsp at a time through the hole in the TM lid.  Ensure each spoonful of powder is well mixed before adding the next.
  • Then  increase the speed to 4 for about 30 seconds to ensure the mix is consistent ie smooth and runny
  • Use a dessert spoon to fill the tiny chocolate moulds
  • Then place the tray of chocolates in the fridge for about 30 minutes to set

Hi Kate, this looks so yummy i can't wait to try it. Can you tell me what the measurements are roughly of the cacao butter, maple syrup, cacao powder and coconut oil in table/tea spoons. I don't have anything to weigh my ingredients! thanks xx
